Why Cajun? Cajun sauce.
The word “Cajun” refers to an ethnic group from the French-Canadian colony who were expelled from Acadia (the former maritime provinces of Canada). Today, Cajuns live in southern Louisiana, in the southern United States.
Their cuisine is rustic, heavily influenced by French, Italian, and Spanish cooking, based on local ingredients and very simple preparation. The main seasonings used by Cajuns are parsley, bay leaves, green onions, and cayenne pepper, which, when combined with other spices like celery seed, thyme, black pepper, garlic, cumin, mustard, and oregano, result in a seasoning used in some of their traditional dishes.
The United States adopted these flavors as “Cajun,” blending similar spices into seasonings, sauces, or marinades. However, in the U.S., it is often mistakenly used as a synonym for spicy or seasoned.
