Prep Time: 20 minutes Cook Time: 30 minutes

Servings: 4 Difficulty: Medium

INGREDIENTS

  • 1 lb (500g) Whole kernel corn (fresh shaved off the cob or frozen/thawed)
  • 1 medium (150g) Yellow onion, finely chopped
  • 2 cloves (10g) Garlic, minced
  • 2–3 (10g) Dried chiles de árbol
  • 1 handful (10g) Fresh epazote leaves (or substitute with fresh cilantro)
  • 2 tbsp Vegetable oil or butter
  • 1 to 1.5 cups Water or low-sodium chicken broth
  • Kosher salt and freshly ground black pepper, to taste
  • 1/4 cup (50g) Mayonnaise
  • 1/2 cup (50g) Cotija cheese or Queso Fresco, crumbled/grated
  • Fresh lime juice, to taste
  • 1 cup (50g) Takis® rolled tortilla chips, crushed
  • 2 tbsp (20g) Mr. Wings® Fuego Seasoning

INSTRUCTIONS

Sauté the Aromatic Base

  1. Heat the oil or butter in a deep skillet or pot over medium heat.
  2. Add the chopped onion, minced garlic, and dried chiles de árbol. Sauté for 3 to 4 minutes until the onion turns translucent and the garlic becomes fragrant.

Simmer the Corn

  1. Add the corn kernels, water (or broth), and fresh epazote to the pot.
  2. Season with salt and black pepper to taste. Bring to a gentle simmer, cover, and cook on medium-low heat for about 25 to 30 minutes, until the corn is tender and juicy.

Assemble & Layer

  1. Scoop the warm corn mixture (along with a spoonful of its flavorful broth) into serving cups.
  2. Top each cup with a tablespoon of mayonnaise, a generous sprinkle of crumbled Cotija cheese, and a handful of crushed Takis®.

Finish with a Fiery Kick

  1. Squeeze fresh lime juice over the top and dust heavily with Mr. Wings® Fuego Seasoning.

SERVING SUGGESTION

For a fun, gourmet presentation, serve in classic Mexican enamelware mugs (jarritos de peltre) or heavy-bottomed rocks glasses (old fashioned glasses) accompanied by lime wedges and extra Mr. Wings® Fuego Seasoning on the side.
